Sodium pyruvate is used as a component in culture broth and media as an energy source for propagating cells. It is also used in Wallen fermentation medium to enhance the conversion of oleic acid to 10-ketostearic acid. It is provided as a 100 mM solution with 8.5 g/L NaCl.
